FISHY FAJITAS

400G Huss / dogfish, or similar firm white fish (could be monkfish if your budget allows!) cut into strips

FOR THE MARINADE

2 bell peppers sliced

1 red onion sliced

1 1/2 tbspn sweet smoked paprika,

1 tbspn ground cumin

1 1/2 tsp black pepper

1 1/2 tsp salt

1 1/2 tsp dried oregano

1 1/2 tsp sugar

1 tsp garlic granules

1/2 tsp hot chilli powder,, ( you can add less or more according to your taste 1/4 or a milder heat!)

MARINADE THE FISH STRIPS IN THE HERBS AND SPICES FOR AT LEAST HALF AN HOUR OR MORE FOR A MORE INTENSE FLAVOUR.

PINEAPPLE 🍍 TOMATO, LIME, MINT AND RED ONION SALSA

CHOP UP AND MIX TOGETHER

1 Pineapple, chucked (you can add drained tinned pineapple if necessary)

1 red onion

3 salad tomatoes, deseeded and diced

1 x lime zested and juiced

1 small bunch of mint, chopped

FRY THE MARINATED FISH IN A SPLASH OF HOT RAPESEED OIL (or similar vegetable oil) ALONG WITH THE STRIPS OF PEPPERS AND RED ONION FOR A FEW MINUTES UNTIL COOKED APPROX 6 – 10 MINS

SERVE COOKED FISH WITH THE SALSA WITH TORTILLA WRAPS OR RICE AND LIME WEDGES.
